Serve it warm with pork.


  • 0,5 litre LISS Cream Whipper
  • 1 LISS Cream charger
  • 150 g chick-pea
  • 200 ml heavy cream
  • 100 ml meat soup
  • 1 egg-white
  • Olive-oil
  • 1 onion
  • 3 cloves of garlic
  • Salt, ground green pepper, ground cumin


Simmer the chopped onion in olive oil (but do not fry it)and the crushed garlic for a little while. Add the peas after soaking for a half a day, simmer it until it gets tender in a little water. Do not stir, only shake the pan. Replace the evaporated water. When it is soft, mix it in a blender or food processor with the cream, dilute with broth, add the egg-white and season it to taste. Fill it into the cream whipper. Screw in one LISS cream charger and shake 15-20 times vigorously.
